Ingredients

  • 8big colocasia leaves
  • 1/2 cupbesan
  • 1/4 cuptamarind pulp
  • 1/4 cupmelted jaggery
  • 1/2 tsphing
  • 1 tspturmeric powder
  • 3 tspred chili powder
  • Salt to taste
  • 1lemon
  • 1 tspsesame seeds
  • 1 tspmustard seeds
  • 2cut green chilis
  • 6curry leaves
  • 1/2 tsphing
  • 4 tspoil
  • 2 tspchopped coriander
  • 2 tspgrated coconut
  • 1/8 tspsesame seeds
  • 1/8 tspcooking soda
  • Salt to taste
  • Water as required

Steps

30 minutes prep time 15 minutes
  1. 1

    Wash and pet dry colocasia leaves. Remove its veins and cut stem. Cut lemon in halves. Rub on each leaf where the veins are removed. Sometimes, these leaves are itching in throat, so lemon juice avoids itching. Keep aside. Soak tamarind and jaggery in water, and make thin liquid paste.

    Take a bowl, add besan flour, salt, hing, turmeric powder, red chili powder, and soda. Mix well. Now add tamarind and jaggery pulp in besan. Mix well and make thin paste.

    Take 1 alvi leaf, apply besan paste on it, put 2 and leaf on it, apply besan paste, and same again in the same way pur more 2 leaves.

    And now, from the ends, start to make tight roll, fold both ends inside the roll. In the same way, make another 4 leaves roll.

    In a steamer, or in cooker, steam this patra rolls till 3 whistles blows. Pressure cools down, open lid, keep aside patra roll to cool completely.

    Cut in thin slices. Take a pan, add oil, mustard seeds, sesame seeds, hing, curry leaves, and green chilis. Saute it. Add cut patra slices. Roast till turns a little crispy.
