This is such a comforting soup, and it reminds me so much of our family dinner time. This slimy yam has 2 variety, a white and a purple. I personally prefer the purple because not only does the color is nice, but taste wise it’s also more fragrant. This is a super nutritious root vegetable. Pair this soup with sweet and savory dish like braised meat or pickled vegetables.

Ingredients

20-30 minutes
4 people
  1. 1purple Yam root (khoai mỡ)(~3 lbs)
  2. 2 ozdried shrimp
  3. 1 tspchicken bouillon
  4. 1/2 tspsalt
  5. 1 Tbsfish sauce
  6. 1 tspfried shallots
  7. 5 cupswater
  8. Garnish
  9. Rice patty herbs
  10. Ground black pepper
  11. Fried shallots

Cooking Instructions

20-30 minutes
  1. 1

    Wash the Yam root & cut into 2 (elongate). Using a spoon, scrape the Yam into a bowl.

    In a pot, add: water, dried shrimp, salt, chicken bouillon, fish sauce, and fried shallot. Bring to a boil before adding in your scrapped yam.

    Bring back to boil and simmer for about 5 minutes. Occasionally stir to separate the yam to cook evenly. Season with more fish sauce to your taste.

    Add garnish: chopped rice paddy herbs, fried shallots, and black pepper.
