Gather ingredients. Preheat oven to 190°C

Cook the tomato base: In pan, heat olive oil over medium high heat. Sauté the onion and garlic until tender (about 5 minutes)

Add in the tomatoes and seasoning, then simmer for 15 minutes or until the sauce has thickened. Taste and adjust seasoning

Spread tomato base evenly in a baking dish

Alternate slices of tomato, aubergine, and zucchini in the dish

Drizzle or brush with olive oil and top with more dried basil, black pepper, and salt

Cover with foil and bake for 30 minutes

Remove foil and bake for an additional 15 minutes until vegetables are tender

Serve immediately and enjoy
Tips
For extra flavor, consider adding garlic or fresh herbs.
