Sauté the onion in a little olive oil, then add the ground beef. Cook until the beef changes color and breaks up. Add the tomato sauce, a little water, salt, pepper, and spices. Let it simmer on the stove until cooked through.

In another pot, cook the pasta according to the package instructions.

Once the pasta is cooked, drain it and start making the béchamel sauce.

Melt the butter in a saucepan, then add the milk, salt, pepper, a little cinnamon, and 2 cloves (optional). Once heated, gradually add the flour through a sifter to avoid lumps, stirring constantly. When the sauce thickens, remove from heat and assemble the pastitsio in a baking dish.

Layer half the pasta, then the meat sauce, then the rest of the pasta. Sprinkle with crumbled feta, and pour the béchamel sauce over the top.

Sprinkle with a little breadcrumbs or semolina, cinnamon, pepper, kasseri cheese, beaten egg yolk, or melted butter.

Bake for 30 minutes at 350°F (180°C).
