Salted duck egg yolk wings

Place wings in a mixing bowl, combine soy sauce, sake, oyster sauce, salt, and black pepper and mix well.

Let the wings marinate in the fridge for 30 minutes.

Once done marinating, coat each piece generously with potato starch. This will help it be extra crispy.

Get out a pan and add in high heat cooking oil for shallow frying, about 1/3 inch deep. Let oil heat to around 350 degrees F.

Shallow fry the wings until both sides are golden and crispy. When ready, remove the wings from the pan and place on a cooling rack to drain the oil.

Leave some leftover oil in the pan. If you’re using whole egg yolks, mash them into a paste. Add in the egg yolk paste to the pan and stir on medium to medium low heat.

The mixture will start to foam — this is when you want to add the wings back into the pan.

Toss the wings in the sauce until evenly coated, and serve immediately with a sprinkle of sesame seeds!
