Arrowroot biscuits are light, easy to digest and much more wholesome and contain more dietary fibrethan refined flour biscuits. They can be eaten by adults, seniors and youngsters too.I have added whole wheat flour and cashews for extra protein, calcium and magnesium.

First, assemble all the ingredients on the counter. They should be at room temperature. Sieve the dry ingredients together 3 times in a bowl.

In another bowl, whisk the butter, brown sugar, vanilla for 5 minutes till fluffy. Then add the milk and dry ingredients alternately in small batches and knead gently with finger tips to a dough.

Keep covered in the refrigerator for 10 minutes. Then preheat the oven at 175 degrees for 10 minutes.

Take a large ball of dough and roll out on a flour - dusted counter to a disc of 1" thickness. Cut out desired shapes.

Alternatively you can take out small portions, make them into elongated rounds and make a design with the back of a spoon as in pictures.

Arrange on a baking tray lined with butter paper and sprinkle cashew bits on top. Press gently to fix them. Then bake the biscuits for 12 to 15 minutes as per your oven temperature at 175 degrees celsius.

Take out the tray from the oven and cool on a wire rack. Serve with your milk/ energy drink or with green tea.
