Ingredients

Serves 8 servings
  1. 2 1/3 cupsbutter cookies, crushed (about 235 grams; use any plain butter cookies)
  2. 1/2 cupunsalted butter, melted (about 125 grams)
  3. 1 drop almond extract
  4. 1 drop almond extract
  5. 1/2 cup mascarpone cheese (about 125 grams)
  6. 1 vanilla bean
  7. 1/4 cup powdered sugar (about 30 grams)
  8. 1 pound fresh strawberries (about 500 grams)
  9. 2 tablespoons strawberry jam
  10. A few fresh mint leaves
  11. A few pistachios

Steps

  1. 1

    Crush the cookies.

  2. 2

    In the bowl of a stand mixer or a food processor with a paddle attachment, mix the crushed cookies with the melted butter and almond extract.

  3. 3

    Place a tart ring on your serving plate, pour in the cookie mixture, press it down gently, and chill in the refrigerator for at least 30 minutes to set.

  4. 4

    In the bowl of a stand mixer or a food processor with a whisk attachment, beat the heavy cream with the mascarpone, vanilla bean seeds, and powdered sugar until stiff peaks form.

  5. 5

    Remove the tart ring and pipe the whipped cream mixture onto the crust using a plain 10 mm tip.

  6. 6

    Slice the washed and dried strawberries in half and arrange them nicely on top of the whipped cream.

  7. 7

    If desired, warm the strawberry jam and brush it over the strawberries, especially if the fruit isn’t very flavorful.

  8. 8

    Garnish with a few mint leaves and chopped pistachios.
