To begin with wash, rinse and soak chana dal for an hour. Boil by adding salt or turmeric. Drain and keep aside. (You can save the boiled water to add later)Now, wash, peel and cut bottle gourd into peices. Soak them in water so that they don't colorize.

Heat oil in a wok, add bay leaf and all achari masala - mustard seeds, cumin seeds, fennel seeds, fenugreek seeds and nigella seeds. When they begin to splutter, add chopped onions.

When the onions are done, add ginger garlic paste. Saute for few minutes. Then add chopped tomatoes. Cook and add salt for the tomatoes to soften.

Now add red chilli powder, turmeric powder and coriander powder. Mix well and add little water. Cover and cook until the oil begins to separate.

Add bottle gourd. Mix well and saute for few minutes. Add 1 cup of water, cover and cook until the lauki turns tender.

Now add boiled chana dal and tamarind pulp.

Add water from the boiled dal, cover and cook until done.

For tempering - Heat oil in a tadka pan, add cumin seeds or whole red chillies. When they begin to crackle, pour this over the dal. Achari Lauki Chana Dal is ready to serve. Garnish with chopped coriander leaves.

Enjoy with Paranthas or pooris.
