To begin, prepare the ellipaya karam. In a mortar and pestle, pound the garlic cloves with red chilli powder and salt to a coarse texture. Keep aside.

Heat oil in a pan. Add in the onions along with the chopped green chillies. Saute until translucent.

Add in the ginger garlic paste with salt. Saute for a minute.

Spread out the mixture evenly. Add the eggs. Do not stir. Cover and cook until the eggs are done as per your choice (runny or well done).

Top the eggs with the ellipaya karam you prepared earlier. Garnish with chopped green coriander leaves.

The Spicy Hyderabadi Khagina is ready to enjoy. Serve hot on toast or with rotis.
