Ingredients

3-4 people
  1. 4-5onions thinly sliced
  2. 1/2 cupgram flour
  3. 2 tbsprice flour
  4. 1 tspgreen chili paste
  5. 1 tspginger garlic paste
  6. 2 tbspfinely chopped coriander leaves
  7. 1/4 tspturmeric powder
  8. 1 tspKashmir chili powder
  9. 1 tspcoriander cumin powder
  10. 1/2 tspcumin seeds
  11. 1/2 tspblack pepper powder
  12. 1 tspdry fenugreek leaves
  13. 1/2 tspgaram masala powder
  14. Salt to taste
  15. Water, as needed to bind
  16. Oil for shallow frying

    In a bowl, add sliced onions and sprinkle a little salt. Let them sit for 5 mins so they release moisture. Add gram flour, rice flour, green chili paste, ginger garlic paste, chopped coriander leaves and all the dry spices.

    Mix everything well, add just a splash of water to bind it into a thick, sticky batter (not too runny). Heat oil in a pan over medium flame. Drop small portion of the batter using your spoon. Fry the Pakoras (fritters) in batches until crispy and golden brown on all sides.

    Remove onto paper towels to drain excess oil. Garnish & serve: garnish with fresh coriander leaves and serve hot with sweet tamarind dip - a perfect monsoon moment from Punjabi tradition 🌧️💚.
