Thai Masman Curry Paste Noodle Soup with Tofu and Shiitake Mushrooms

I had some leftover satay pork dipping sauce, so I mixed it into a broth and added pasta noodles. The result was a delicious curry noodle soup. I didn't feel like cooking meat, so I used tofu, shiitake mushrooms, and whatever beans I had on hand. The broth is made from onions and shiitake mushrooms—it's really tasty.

Season the tofu and bake until crispy, as desired.

Cook the pasta or blanch the noodles, then drain and set aside. Prepare the fresh vegetables, garnishes, and boil the egg. Soak the shiitake mushrooms.

In a pot, bring the broth to a boil. Add the shiitake mushrooms, onion, and cooked beans. Season lightly with soy sauce, salt, and pepper. Once boiling, add the masman curry paste satay sauce, then add the pasta or noodles and tofu. Let everything heat through.

Once the noodles and other ingredients are ready, turn off the heat.

Serve with fresh vegetables, garnishes, the hard-boiled egg, and a squeeze of lime.
