Ingredients

5 minutes
2 to 4 Servings
  1. 80-100 gDried Harusame (Bean Thread Noodles)
  2. 1/2Continental Cucumber *about 160g
  3. 1/4 teaspoonSalt
  4. 2 tablespoonsDried Cut Wakame
  5. Dressing
  6. 1 tablespoonSugar
  7. 3 tablespoons‘Ponzu’ *OR 1 & 1/2 tablespoons Soy Sauce & 1 & 1/2 tablespoons Rice Vinegar
  8. 1 tablespoonSesame Oil
  9. 1 tablespoonToasted Sesame Seeds
  10. 1/8 teaspoonDashi Powder *optional, ‘Katsuo’ (Bonito) OR Kombu (Kelp)

Steps

  1. 1

    Thinly slice Cucumber into a bowl. Add Salt and massage, then set aside for a while.

  2. 2

    Soak Dry Wakame in cold water until soft, and drain and remove excess water.

  3. 3

    Cook Dried Harusame (Bean Thread Noodles) in boiling water until soft, drain, cool in cold water, then drain very well. Cut to 5-10cm in length.

  4. 4

    In a mixing bowl, combine all the Dressing ingredients. Squeeze Cucumber slices to remove excess water, add to the bowl. Add Wakame and Harusame, and mix to combine.
