A salad made with Harusame (Bean Thread Noodles) is always a popular side dish for my family’s dinner. The other day, I made a very quick and simple one with Wakame and Cucumber only, and it was actually delicious. You have the ingredients? Then why don’t you try it?

Thinly slice Cucumber into a bowl. Add Salt and massage, then set aside for a while.

Soak Dry Wakame in cold water until soft, and drain and remove excess water.

Cook Dried Harusame (Bean Thread Noodles) in boiling water until soft, drain, cool in cold water, then drain very well. Cut to 5-10cm in length.

In a mixing bowl, combine all the Dressing ingredients. Squeeze Cucumber slices to remove excess water, add to the bowl. Add Wakame and Harusame, and mix to combine.
