Tamarind Vegetable Soup with Ground Spices

While grinding the spices, prepare water and bring it to a boil. Once boiling, add the corn and melinjo seeds. Wait until it boils again.

After the water boils, add the spice paste, bay leaves, galangal, tamarind pods, and tamarind water. Stir and wait until the spices are cooked and fragrant.

Once the spices are cooked, add the young jackfruit and chayote. Wait until the jackfruit and chayote are half-cooked.

When the jackfruit and chayote start to soften, add salt, granulated sugar, and palm sugar. Adjust the seasoning to taste.

If the taste is right, add the long green beans, melinjo leaves, and eggplant.

Stir until the vegetables are evenly mixed, and wait until all the vegetables are cooked. Turn off the heat and serve.
