Ingredients

  1. 250 grkidney beans
  2. 1 literwater
  3. 3shallots
  4. 3large red chilli (optional)
  5. 1segment -+2.5 cm galangal (crushed)
  6. 1tomato
  7. 3bay leaves
  8. 20 grtamarind
  9. 50 grpalm sugar
  10. 1 stalkleek
  11. 1 tspsalt
  12. 1 tbspwhite sugar
  13. 1 tspmushroom powder

Cooking Instructions

    Soak the red kidney beans overnight. But we could skip this step. This step only for kidney beans easily smoothed

  2. 2

    Boiled the water, added the kidney beans. Boiled for approximately 10 minutes. We only need half cooked. Drained.

    Prepare all ingredients. Thinly slice the shallots, and red chilies, then set aside. Crush the galangal and set aside. Boiled the water,then Add shallots,red chillies, galangal, bay leaves.

    After boiling, Add the red kidney beans. Boil until the beans are soft. Give tamarind 2 tbsp water. Mix it. We need clean tamarind paste.

    Add the tomato, tamarind paste, palm sugar, salt, white sugar, and mushroom stock. Cook until the aroma develops. taste it. It should be mixed : sour sweet and salty taste.

    Last step, add the leek and tomato. Cook until the tomato soften. Ready to serve
