Olan is a delicious and a healthy curry made with White Pumpkin or Ash Gourd along with Red Cowpeas or Red Lobia or Chawli. This homely style stew is one of the dishes prepared for Onam sadhya. It makes for a super comforting meal when paired with simple boiled Rice or Kerala (Red) Matta Rice. Olan is a light and mild curry with flavours of Coconut Milk, Curry leaves and Cowpeas. For an authentic flavour in the dish, use a good brand of pure Coconut oil which takes it to an altogether different level. It cannot be compromised with any other oil. Ash Gourd is used for this Curry but Yellow Pumpkin can also be used. And though Red Cowpeas are used, Black Eyed Beans or Cowpeas can also be used.

Steps

Wash and rinse the cowpeas thoroughly. Soak overnight for best results. Next day, pressure cook until soft. Set aside until use.

Rinse and peel ash gourd. Chop it in medium cubes. Discard the seeds and pith. Add these cubes along with boiled cowpeas to a pan.

Also add salt, slit green chillies and curry leaves with a cup of water. Cover and cook until the ash gourd is soft and done.

Keep checking in between to see that the ash gourd is cooked well. It has to be cooked until tender. And the water should also almost dry. Now add the coconut milk. Do not bring it to a boil.

Let it just heat gently and adjust salt as well. Finally after 3-4 minutes of heating gently, switch off the flame. Drizzle coconut oil. Cover and leave it undisturbed for a minute. After that, it is absolutely ready to be served.

Also add a few torn curry leaves for the freshness without fail before the oil is drizzled on. Serve it warm right away. Enjoy!
Tips
Thick homemade Coconut Milk is always the best for this lip-smacking Stew.
