Ingredients

6 servings
  • 4-6chicken leg quarters, skinless
  • As required, water
  • To taste, salt
  • 1 cupvinegar
  • 2onions, quarters
  • 6green chillies
  • 8 clovesgarlic
  • 2 tbsp.cilantro
  • 1 tbsp.chilli flakes
  • 1 tsp.chilli powder
  • 1 tsp.pepper powder
  • 1 tbsp.coriander powder
  • 1 tsp.turmeric
  • 1/2 tsp.carom seeds
  • 1lemon juice
  • 1 tsp.chilli sauce
  • 1 tbsp.soy sauce
  • 2 tbsp.oil

    Make slit marks on chicken.

  2. 2

    Pour water in a large bowl with 6 tablespoons of salt and vinegar. Mix well to dissolve the salt.

    Add the chicken and allow to brine for 20-30 minutes.

  4. 4

    In a blender jar add the remaining ingredients and salt and blend to a smooth paste. Set aside the marinade.

  5. 5

    Preheat oven to 400F/204C and line a baking tray with foil.

  6. 6

    Drain the chicken and wash thoroughly. Pat dry with kitchen towel.

  7. 7

    Place the chicken in a large bowl and pour over the marinade. Coat the marinade onto the chicken.

  8. 8

    Place on prepared tray and bake for 40-45 minutes, flipping half way through. Bake till chicken is done (internal temperature with an instant-read thermometer reaches 165°F.)

  9. 9

    Rest the chicken for about 5 minutes before serving to allow the juices to redistribute.

    Serve with desired sides (cumin rice and Asian cucumber salad).
