Rinse rice and soak for 15 minutes. Drain.

Heat oil in a pan, add cardamom, cloves, and cinnamon. Sauté until fragrant.

Add onion and ginger-garlic paste. Sauté until onion is soft.

Add mixed vegetables and sauté for 2 minutes. Add chopped beetroot and cook for 2 more minutes.

Stir in fresh coconut and Kerala garam masala. Mix well.

Add rice and salt. Mix gently.

Pour in water, bring to a boil, then cover and simmer on low until rice is cooked.

Fluff gently and serve hot.

Kerala Style Beetroot Pulav is ready to serve. Garnish with coriander leaves and grated coconut.
Tips
For extra flavor, you can add a few curry leaves while sautéing the spices.
