Steps

Separate egg whites and yolks into two bowls.

Add lemon juice to egg whites and whisk until bubbly.

Add vanilla extract, then gradually add sugar while whisking to stiff peaks.

In another bowl, mix egg yolks until smooth.

Oil a pan and heat on low. Pour in egg yolks and cook until half set.

Spoon whipped egg whites onto yolk base, shaping as desired.

Pour a little water around the pan, cover, and steam for 3-4 minutes.

Check doneness with a toothpick. Remove from pan.

Top with vanilla protein Greek yogurt, strawberries, blueberries, and drizzle with honey if desired.
Tips
Using a hand mixer for the egg whites will help achieve stiff peaks more easily. Additionally, as the water starts to evaporate from the pan during cooking process, keep on adding more bit by bit
