Steamed Herbal Chicken

Steamed chicken, but make it tonic. Using a two-layer steaming method, the chicken stays tender while its juices drip down to infuse goji berries and cordyceps below!! This creates a naturally sweet, herbal broth that infuses so well with the scallion ginger oil!

Goji berries (枸杞):- Nourishes the liver and kidneys, support eye health, and help boost energy and immunity. They’re considered a gentle yin tonic and replenishes fluids and promoting vitality.

Cordyceps (冬虫夏草)- Strengthen the lungs and kidneys, improve stamina, and support recovery and immune function. They’re known for enhancing overall vitality and resilience.

Red dates- Support digestion, and harmonize the effects of other herbs. They make the dish more restorative and comforting, especially when paired with chicken and ginger.

Ginger- Promotes circulation, aids digestion, and helps warm the body.

Flavor notes:
Goji berries → mildly sweet adding a brightness and a gentle fruitiness.

Cordyceps mushrooms → earthy, slightly nutty, and a bit umami.

Jujube (red dates) → rich sweetness that rounds out the earthy notes of the cordyceps.

  1. 2chicken drumsticks
  2. 1 inchginger
  3. 3red dates
  4. 1 tbspgoji berries
  5. 1 handfuldehydrated cordyceps mushrooms
  6. Sauce
  7. 2 tbspcilantro (diced)
  8. 2 tbspgreen onions (diced)
  9. 2 tbspginger (diced)
  10. 1 tbsplight soy sauce
  11. 1/2 tspsugar
  12. 1/4 tspsalt
  13. 2 tbspneutral oil

    All the ingredients needed shown in photo form.

    Rinse and rehydrate goji berries and cordyceps in room temperature water for 10 mins and drain.

    Make diagonal slits on chicken drumsticks, cut ginger into slices, and rinse red dates. In a heatproof steaming dish, place the goji berries and cordyceps, then set another bowl on top. Arrange the chicken drumsticks around the bowl and scatter ginger slices and red dates on top

    Steam over medium heat for 15 minutes, then turn off the heat and let it sit, covered, for another 5 minutes to finish cooking gently.

    While the chicken steams, combine equal parts chopped scallion, ginger, and cilantro in a heatproof bowl. Heat neutral oil until hot, then carefully pour it over the aromatics. Season with soy sauce, salt, and a pinch of sugar, and mix well to combine.

    Once the chicken has cooled slightly, shred the meat.

    Optional- Take the ginger, dates, and goji berries out of the essence, leaving the liquid and cordyceps. This shifts the flavor slightly from sweet-nourishing to savory-umami herbal. Both are delicious, just different moods of the same dish. If you decide to take them out, you can use it as a warming tonic ora base for soup or congee.

    Add the chicken herbal essence (steaming liquid) from the lower bowl to the scallion-ginger oil, then toss with the shredded chicken until well coated. Top it off with the cordyceps.
