Ingredients

30 Minutes
1-4 servings
  1. 1/4 tspLemon pepper
  2. as neededDairy-free sour cream cucumber salsa
  3. 1/2 cupViolife shredded mozzarella (or vegan cheese)
  4. 1/2piece, broken in half Crunchy corn taco shell
  5. 1Gluten-free tortilla (large)
  6. to taste Salt
  7. 1/2 tspOregano
  8. 1/2 tspOnion powder
  9. 1/2 tspPaprika
  10. 1 packImpossible meat
  11. 1/2 tspEverything mushroom seasoning
  12. 1/2 tspVegan chicken bouillon
  13. 1/2 tspVegan red pepper seasoning (or chili powder)
  14. 1/2 tspSazón tropical
  15. 1/4 cupGreen bell pepper (diced)
  16. 1/4 cupOnion (diced)
  17. 2 tbspHomemade sofrito
  18. 1 tbspAvocado oil plant butter (or avocado oil)

Steps

30 Minutes
  1. 1

    Mix cucumber, tomato, onion, dairy-free sour cream, salt, and pepper. Chill.

  2. 2

    In a skillet, melt plant butter. Sauté onion, green pepper, and sofrito for 2 min.

  3. 3

    Add Impossible meat. Cook until browned, breaking up. Add all seasonings.

  4. 4

    Simmer 5–7 min until flavors blend. Remove from heat.

  5. 5

    Lay tortilla flat. Layer Impossible mixture, vegan cheese, half taco shell, more filling, more cheese.

  6. 6

    (Optional) Add a spoon of crema or sour cream in the center.

  7. 7

    Fold tortilla edges over filling to seal.

  8. 8

    Toast seam-side down in skillet with avocado oil, 2–3 min per side until golden.

  9. 9

    Cut in half and serve warm with cucumber-tomato crema.
