Mission: keep it gluten-free, dairy-free, and still dangerously good. Objective: achieved. This wrap is crunchy on the outside, juicy on the inside, and serving flavor like it’s top secret. 🔥

Mix cucumber, tomato, onion, dairy-free sour cream, salt, and pepper. Chill.

In a skillet, melt plant butter. Sauté onion, green pepper, and sofrito for 2 min.

Add Impossible meat. Cook until browned, breaking up. Add all seasonings.

Simmer 5–7 min until flavors blend. Remove from heat.

Lay tortilla flat. Layer Impossible mixture, vegan cheese, half taco shell, more filling, more cheese.

(Optional) Add a spoon of crema or sour cream in the center.

Fold tortilla edges over filling to seal.

Toast seam-side down in skillet with avocado oil, 2–3 min per side until golden.

Cut in half and serve warm with cucumber-tomato crema.
