Prepare your favorite bread roll. Wash the cucumber and eggs. Cut the salmon into a 3/4-inch thick slice (about 2 cm), rinse, and pat dry. Sprinkle both sides with about 1/4 teaspoon salt (not listed in ingredients). If you have time, refrigerate the salmon uncovered to let the fridge absorb excess moisture—this saves paper towels. If you’re short on time or fridge space, just pat the salmon dry with paper towels to prevent oil splatter.

Add 1 teaspoon oil to a pan and heat over low. Once hot, add the salmon and cover with a clear lid. When you see the salmon turn opaque through the lid, remove the lid and carefully flip the salmon. Cover and cook the other side. To check if it’s done, poke the thickest part with chopsticks—if they go through easily, it’s cooked. The central bone should also start to separate from the flesh.

Add another 1 teaspoon oil to the pan and fry the eggs.

While the salmon is cooking, slice the cucumber and bread. Once the salmon and eggs are ready, arrange everything on a plate and add the frozen berries.
