Red Velvet Cake Bites

For New Year's celebrations, it's fun to make something a little different. Instead of a regular cake, I made these cake bites, which are single-serve, easy to eat, and healthy too! They're made with semolina and cooked in an appe pan, making them a favorite for kids. These red velvet flower-shaped bites are sure to be a hit.

For New Year's celebrations, it's fun to make something a little different. Instead of a regular cake, I made these cake bites, which are single-serve, easy to eat, and healthy too! They're made with semolina and cooked in an appe pan, making them a favorite for kids. These red velvet flower-shaped bites are sure to be a hit.

Crush the semolina in a blender jar. You can use either fine or coarse semolina, as it will be crushed anyway. Transfer to a bowl, add the all-purpose flour, and mix. (You can also use ragi flour instead, in which case you can skip the cocoa powder since ragi gives a natural brown color.)

In another bowl, combine the yogurt and powdered sugar. Mix well. Add the red food coloring and vanilla extract, and mix again.

Add the melted butter and mix. Pour in the milk and mix again. Now add the baking soda, baking powder, and cocoa powder to the flour mixture and mix.

Combine the wet mixture with the dry mixture and mix to make a batter.

Preheat an appe pan. Place a griddle (tawa) on the stove and set the appe pan on top of it to prevent the batter from burning. Grease the appe pan with butter.

Using a spoon, pour the batter into the appe pan molds. Cover and cook on medium heat until both sides are cooked and crispy. The cake bites will be soft and buttery.

For garnish, make a white chocolate ganache: break the milk chocolate into pieces. If you don't have cream, mix heavy cream and milk, heat it, and add the white chocolate to make the ganache. Spread the ganache over the cake bites and garnish with chocolate. Celebrate your New Year's party and enjoy!
