Baked Meatballs with Potatoes

If using bread, soak it in water and squeeze out excess moisture. If using rusks, break them into tiny pieces.

Finely chop the onions, garlic, and parsley.

In a large bowl, combine ground meat, onions, garlic, parsley, mustard, bread or rusks, eggs, salt, and pepper. Knead well.

If the mixture feels too firm, add a little water (about half a wine glass).

Shape into meatballs and arrange them side by side in a baking tray.

Peel and cut the potatoes, season with salt and pepper, and add them to the tray.

Dissolve tomato paste in enough water to cover the meatballs and pour over.

Drizzle generously with olive oil.

Bake at 200°C for about 1 hour. Turn the meatballs if needed during baking.
Tips
For a variation, you can add grated cheese to the meat mixture for extra flavor.
