  1. 2 piecesRoti (cut into noodle shapes)
  2. to taste Salt
  3. as required Oil
  4. 1Capsicum (sliced)
  5. 1Tomato (chopped)
  6. 1Onion (chopped)
  7. 2Green chili
  8. 0.5 tspTurmeric powder
  9. 0.5 cupCabbage (optional, shredded)
  10. 0.5 cupCarrot (optional, julienned)
  11. a fewsprigs Coriander leaves (for garnish)

Steps

15 minutes.
  1. 1

    Heat oil in a pan and add chopped onion.

    Fry onions until lightly golden brown.

    Add tomatoes, green chili, salt, and turmeric powder. Cook until tomatoes soften.

    Add capsicum, cabbage, and carrot. Cover and cook on low flame for 3 minutes.

    Add the cut roti pieces and mix well.

    Garnish with coriander leaves and serve hot.

Tips

For a crunchier texture, add the vegetables just after the tomatoes are lightly cooked. You can also include cabbage and carrots for added flavor and nutrition.
