Palak Paneer (simply authentic taste)

Boil 2 cups water with 1 tsp salt. Add spinach leaves, blanch for 2 min. Transfer spinach to iced water. Once cool, drain.

Blend spinach, green chillies, and some ice cubes into a smooth paste.

Heat 1 to 2 tbsp ghee in a pan, add 1 tsp cumin seeds to splatter. Sauté 20 cloves garlic for 1-2 min, then fry 1 large onion until pink.

Add spinach paste, 1 tsp salt, 1/2 tsp garam masala, and 1 cup paneer cubes. Mix well.

Adjust consistency with water if needed. Simmer gently, do not overcook. Stir in 3 tbsp milk cream, combine well, and serve. We add cream to get the creamy texture. If we cook for longer after adding the cream, it will. Release oil and not feel Creamy anymore.

Serve hot with paratha/naan and rice. Yummm!
Tips
Adjust the amount of green chillies based on your spice preference.
