Blend all curry paste ingredients with 2 tsp water to make a smooth paste.

Cut all veggies and chicken into cubes.

In a pan, heat 1 tbsp butter and 2 tsp oil. Sauté chicken with salt and pepper, then remove from pan. (Eliminate this step if not using chicken)

Add 2 tsp oil to the pan. Add peppers, brinjal, then broccoli. Add salt and 1/4 cup water, cover and cook for 7-8 mins.

Add curry paste and cooked chicken to the pan. Cook for 5 mins.

Pour in coconut milk, 1/4 cup hot water, basil leaves, pepper powder, cumin powder, and a squeeze of lime.

Let it simmer for 4-5 mins. Adjust salt and pepper before serving.

Serve hot with steamed rice.
