Custard hmmm it’s creamy,yummy and a quick fix for something sweet and satisfying. Can be used in between chocolate layered cakes, in doughnuts or by itself. Very enjoyable anytime of the day.

Custard hmmm it’s creamy,yummy and a quick fix for something sweet and satisfying. Can be used in between chocolate layered cakes, in doughnuts or by itself. Very enjoyable anytime of the day.
Steps

Cut plantains into chunks cover with water and cook on medium high until they turn a darker shade of yellow and tender when a knife is inserted. Let cool and add to blender with about 2 1/2c of the water they were boiled in.

Add milk powder and sugar. Blend until creamy. Add back to the pot.

Scramble the egg yolks and add 1/2c of blended plantain mixture and mix well.

This is done to prevent the eggs from getting scrambled. Now add the eggs and corn flour and mix til no lumps. Stir to the pot with blended plantains on a low heat and mix constantly for about 8 minutes.

Consistency should be as below. Like pudding. Turn off heat and when the custard is warm add the butter and incorporate it well. Refrigerate until chilled and then enjoy as is or as you so desire. Enjoy this very creamy custard with a light buttery flavor and have a beautiful day ❤️
