Beef Mince Hot Pot

Chop onion into small chunks. Peel and slice carrots into 1cm thick rounds.

Heat spray oil in a large saucepan. Soften onion on medium heat, then add carrots and cook for a few minutes.

Add ground beef and cook until browned.

Stir in ketchup and Worcestershire sauce.

Add beef stock, bring to a boil, then simmer for 10 minutes. Add peas for the last 2 minutes.

Slice potatoes into rounds (1.5cm thick), leaving skin on. Stab each slice in the center.

Pour mince mixture into a casserole dish. Layer potatoes on top, overlapping slightly.

Spray potato tops with spray oil.

Place any extra potato rounds on a baking tray and spray with oil.

Bake casserole and tray at 200°C (180°C fan) for 30 minutes, until potatoes are browned and cooked through.

If potatoes aren’t browned, place under broiler for 3–5 minutes until golden.
Tips
For extra flavor, consider adding herbs like thyme or rosemary to the beef mixture.
