This is a dish my partner loves, so I always make it for him ♥️

Separate the chicken leg quarters and place them in a baking dish. In a preheated pot, add olive oil. Once hot, add the chicken pieces and brown them over medium-high heat. Add the sliced onion, carrot, and seasonings.

Sauté everything together, and when almost done, add cold water or broth.

Let it cook on low heat for 30 to 40 minutes for a delicious broth.

For the mashed potatoes: Cut the potatoes in half and cook them in a pot with enough water to cover for 20 minutes.

Once cooked, drain them. In the same pot, add the milk, butter, and potatoes. Mash with a potato masher until smooth and well combined.

Serve the mashed potatoes with the chicken in its juices.
