Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a bowl, combine the sourdough discard, melted butter, and a pinch of salt (if using). Mix until smooth and fully blended.

Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each.

Using the back of a spoon, gently spread each portion into a thin oval or round shape, about 1/8 inch thick. The thinner you spread, the crispier the result.

Sprinkle the tops with Italian seasoning or any toppings you like—try cinnamon for a sweet twist, or stick with herbs like chives, dill, or oregano for a savory flavor.

Bake in the preheated oven, starting with 10 minutes. Check for golden edges and crispness; bake longer if needed, depending on thickness (up to 20 minutes).

Remove from the oven and let the crisps cool completely on the baking sheet—they will continue to crisp up as they cool.

Once cooled, carefully lift the crisps from the parchment and enjoy as a snack or with your favorite dip.
Tips
