Turmeric and Purple Carrot Sourdough Loaf

Besides looking beautiful, it’s absolutely delicious! The inside didn’t turn out exactly like the recipe in my book, so I’ll need to keep practicing, but it’s still very, very tasty. I think it’s because I changed the flour—I didn’t use bread flour. I’ll try it again to see if that’s the reason.
I’m still baking homemade bread. The weekend is here, and it’s time to make a tasty loaf for the holidays.
Today, I was inspired by a recipe from Sylvain Vernay, whom I discovered on social media while searching for baking recipes, as I often do.
He has a beautiful blog with stunning photos. The first recipe I tried from his blog was bagels, and wow, they were amazing. Since then, I’ve followed much of his work and bought his book when it was released. It’s full of great recipes—highly recommended. You do need to understand the sourdough process a bit; it took me some time, but now I get how it works, and it’s not as complicated as it seems.
Anyway, to the point—I adapted the recipe and swapped out the beetroot for purple carrot (my great discovery 💡). It’s really tasty and has a spectacular color! I made it with Triticum flour from the “Molí de Pico” flour mill, which is so much better than supermarket flour, and believe it or not, it’s even more affordable—except for specialty flours like in this case.

Ingredients

Purple Carrot Dough:
  • 2 1/3 cupsTriticum flour (about 300 grams)
  • 7/8 cuppurple carrot purée (about 210 grams, or use beetroot)
  • 6 3/4 tablespoonswater (about 99 grams)
  • 1/3 cupsourdough starter (about 90 grams)
  • 1 teaspoonsalt (about 6 grams)
  • Turmeric Dough:
  • 2 1/3 cupsTriticum flour (about 300 grams)
  • 1scant cup water (about 220 grams)
  • 1/3 cupsourdough starter (about 90 grams)
  • 1 teaspoonsalt (about 6 grams)
  • 4 teaspoonsground turmeric

Steps

    First, roast or steam the carrots. Here, they were steamed in the microwave for about 10 minutes. Set aside.

    Prepare two bowls to make the doughs separately.

    Take out the sourdough starter, which should be active from the night before.

    Add the ingredients to each bowl. Wear gloves, as the dough can stain your hands.

    Mix until combined and let the dough rest for autolysis, about 60 minutes. Cover the bowls.

    Perform 6 sets of folds every 30 minutes. After that, turn each dough out onto a floured work surface and shape each into a rectangle.

    Place one dough on top of the other and shape together. Flour a proofing basket (banneton) and place the dough inside, seam side up.

    Cover and let rise for the first fermentation at room temperature for 60 minutes.

    After that, refrigerate for the second fermentation overnight, about 12 to 14 hours.

    In the morning, preheat the oven to 455°F (235°C) and take the dough out of the fridge. Score the top and bake covered for the first 20 minutes, then uncover and bake for another 30 minutes at 430°F (220°C).
