Ingredients

2 servings
  • 90 g(from a 125g can) Sardines in olive oil
  • 50 gUnsalted butter
  • 50 gOnion, finely chopped
  • to tasteSalt
  • to tasteFreshly ground black pepper
  • 1 tspProvençal dried herb mix
  • 1 tbspExtra virgin olive oil

Steps

  1. 1

    Finely chop the onion. Reserve the olive oil from the can.

  2. 2

    In a bowl, roughly mash sardines, onion, butter, salt, pepper, and herbs with a fork.

  3. 3

    Add olive oil and mix until you reach a chunky texture.

  4. 4

    Serve fresh, or store in a sealed container in the fridge for a few days.

Tips

This pâté is best served fresh, but can be stored in the fridge for a few days. Drizzle with olive oil to prevent oxidation.
