This is a side dish we really enjoy serving with a main course.

Cut the zucchini into fairly large wedges and place them in a nonstick skillet with a drizzle of olive oil and the garlic clove.

Cook the zucchini for about 20–30 minutes. Add salt and parsley if desired. Once cooked, set them aside.

Meanwhile, slice the carrots into rounds and cut the potatoes into cubes. Bring a skillet of water to a boil.

Once the water is boiling, add the carrots and potatoes to blanch them for about 6–8 minutes.

When ready, transfer the carrots and potatoes to the nonstick skillet with a drizzle of olive oil. Add salt and vegetable seasoning. Cook the vegetables over medium-high heat for about 10–15 minutes, until golden.

Once the carrots and potatoes are ready, lower the heat and add the previously cooked zucchini to warm everything together. Your side dish is ready to enjoy hot.
