I've always liked meatloaf, but for some reason never cooked it for our boys until a few months ago. Now, this is a family favourite. Moist and super flavourful, and a great way to sneak in more veggies!

I've always liked meatloaf, but for some reason never cooked it for our boys until a few months ago. Now, this is a family favourite. Moist and super flavourful, and a great way to sneak in more veggies!

Preheat the oven to 350°.

In a large skillet, melt the butter over medium-low heat. Add the onion, carrot, and celery (mirepoix). Cook until softened, stirring occasionally (about 10-15 mins). Set aside to cool.

In a large mixing bowl, break up ground beef into small peices. Add the rest of the ingredients, (except for glaze) and cooked mirepoix.

Using your hands, gently turn over all ingredients until well mixed. Avoid squeezing and over mixing.

Pour out onto a parchment lined baking sheet and shape into a loaf.

Bake on middle rack in oven for about 40 mins.

Remove the loaf from the oven and cover the entire thing with the glaze.

Put back into oven and cook for an additional 15-20 mins until internal temp reads 160°.

Remove from oven and let rest for 10 mins to allow juices to redistribute before serving.
