Simple Stir-Fried Winter Melon with Black Pepper

Many people who switch to a vegetarian diet often wonder what vegetables to stir-fry together. Sometimes, things are simpler than we think—fresh vegetables already have a natural sweetness, so you don’t always need to add mushrooms or anything else. For someone like me who doesn’t like mushrooms, just stir-frying vegetables with a little seasoning, salt, pepper, and some fresh herbs makes a delicious dish. The simplest things are often the easiest to eat and make.

Steps
- 1
Peel the winter melon, remove the seeds, and slice thinly.
- 2
Toss the winter melon with seasoning powder and a little cooking oil. Let it marinate for 15 minutes.
- 3
Heat a pan, add cooking oil and the winter melon. Stir-fry, add water, and mix well so the melon doesn’t dry out.
- 4
Stir-fry for about 5 minutes over medium heat until the melon is just tender. Sprinkle with black pepper and cilantro, toss, then turn off the heat.
