Take tomatoes, carrots and beetroot, Peel them. Wash them and roughly chop them. Put them in a pressure cooker add 2cups of water to it along with 1tbsp salt then put the lid on it and pressure cook it for 1 whistle on high flame and 2-3 on low flame then off the gas stove and allow the pressure cooker to release the pressure on it's own. Once cool down add the mixture to the mixer grinder along with the water and grind it to a smooth and fine paste.You can even seive it to make it more smoother

Now in a wok add 2 tbsp butter. When melts add ginger and garlic paste. Cook until raw smell goes away then add the tomato, carrot and beetroot paste to it mix it and allow it to boil. Once start to boil add remaining salt, red chilli powder, black pepper powder, dry roasted cumin powder and sugar mix well and allow it to boil again. Then add dry fenugreek or kasuri methi to it and mix well. Add a dollop of butter and off the flame. Add the chopped coriander leaves and serve hot.
