Kaju Karela Sabji

Peel only the tough outer skin of karela. Slice lengthwise and rub with salt. Set aside for 5 min.

Heat oil in a pan. Squeeze out water from karela and fry until crispy.

In another pan, heat 2 tbsp oil. Add mustard seeds, cumin seeds, and asafoetida. Sauté onion, then add chopped cashews.

Add all spices and fried karela chips. Mix well.

Add jaggery and cashew powder. Mix and cook for 2 min. Garnish with coriander and serve.

Kaju karela sabji is ready.
Tips
Remove only the tough outer skin of karela to minimize bitterness, and rub with salt to enhance flavor.
