This recipe is what I use for making my doughs along with my Soaker Recipe (https://cookpad.wasmer.app/us/recipes/259647-basic-soaker). It is refrigerated and can be held for a while until you are ready to make a dough. It is made with Whole Wheat Flour to make it a healthier choice. Mix all ingredients together and knead for 2 minutes.

Let the dough rest for 5 minutes.

Then knead it again for 1 minute.

Place the dough in a bowl, cover tightly with plastic for at least 8 hours in refrigerator. Then it is ready when you are to make your dough.

Note: 2 hours prior to final mixing a dough recipe pull "biga" out of the refrigerator to come up to room temp.
