Ingredients

  • Utensils:
  • Oven (pre-heated to 450 degrees)
  • Chef knife
  • Cutting Board
  • Rolling pin
  • 1/4 Cup Liquid Measure
  • Food scale (helpful but not a must)
  • Tablespoon Measure
  • 1 Cup Dry Measure
  • 1 Large Sauteuse (Saute Pan/ Skillet)
  • Wooden Spoon or tongs
  • Medium Size Bowl
  • Metal Sheet Pan / baking sheet
  • Aluminum foil (optional, to make clean up easier)
  • Large Spatula or Pizza Peel
  • Ingredients:
  • 4 each whole wheat pizza dough crust (9 inches each)
  • 1 cupwheat flour (for rolling out pizza dough)
  • 1 each shallot
  • 1 eachgarlic clove
  • 1 1/2 lbsbaby spinach
  • 4 eachRoma tomatoes (sliced into 8 slices each)
  • 2 eachlarge Portobello mushrooms
  • 12 oz.Feta cheese, crumbled
  • ¼ cup olive oil
  • 4 TbspCracked Black Pepper
  • 1 CupCorn Meal (for cooking, gives an authentic feel and taste)

    Prep all the ingredients; Mince (fine dice) Shallots and Garlic, Chop baby spinach, Slice Roma Tomatoes (sliced into 8 slices each), Slice Mushrooms

  2. 2

    Heat on the stove the large sauteuse

  3. 3

    Then add 1/4 cup olive oil

  4. 4

    Then add all the shallots and garlics, Sauté / sweat for 1 minute

  5. 5

    Next add the sliced Portobello mushrooms, sauté for another 3 minutes (careful not to brown the garlic)

  6. 6

    Then add the chopped spinach (stirring), sauté until lightly wilted (about 10 seconds)

  7. 7

    Empty Pan into bowl to cool down

  8. 8

    Roll out the 4 pizza dough crusts to 4 each 9 inch discs.

    Place Aluminum Foil in sheet pan to cover

  10. 10

    Place Pizza dough on pan (2 per pan should fit)

  11. 11

    (optional) Dust under dough with corn meal (to prevent sticking) by lifting a corner of the dough and lightly toss a small amount of corn meal under dough. Prevents sticking and gives an authentic texture to the bottom of the dough.

    Top each pizza with equal amounts of the spinach/ mushroom mix.

  13. 13

    Arrange 8 slices of tomato per pizza.

  14. 14

    Sprinkle 3 ounces of Feta cheese per pizza crust.

    Season with cracked black pepper

  16. 16

    Bake for 2 minutes and turn/ rotate pan 180 degrees for even baking

  17. 17

    Cook time should take 5 to 8 minutes to bake depending on oven.

  18. 18

    Preheat the oven at 450F.

My apologies for being away, I had a Traumatic Brain Injury that I was recovering from and now I'm back. I started up a new production company "Chef Hat Productions" , have founded a nonprofit for kids "Healthier Choices For A Hungry Child" 501c3 (HealthierChoicesinc.org) and Creator of "Family Flavors with Kid Kulinaire" (KidKulinaire.com), Alumni of the Culinary Institute of America (youngest to graduate at 19 years old), Highest Chef Award at Disney at 21 years old. I was named"2003 Top 1% in the nation at turning around companies".What's new for 2018We have a DVD program that will go into production in February, the first will be "Kid Fun Fit". Austin St. John (the Original Red Ranger) and Fernando Smith (Former NFL Vikings Player) and both joining me as Owner's of the project. There will be lesson plans and activities, books and a new revised website.We will then follow up with "Kid Kulinaire" cooking DVDs to follow.I enjoy all aspects of working with food and teaching families to make healthier choices in Food and Fitness while having Fun together as a Family.
