Espresso Jello

This is a quick and easy sweet treat with few ingredients, things we usually have on hand in our pantry and fridge. This was my test run for the recipe, and after tasting it I'm thinking it'd probably be even better with a shot of my favorite bourbon stirred into the mix. Yum!
The only thing I didn't care for was the texture. IMO it would be perfect as-is IF you were chilling in tiny molds or cutting into cubes for finger food (Jello Jigglers?). When I make this again, I'll definitely use just 1 packet of gelatin rather than 3 (maybe even less).

Place 1/2 cup of ice water into a small bowl or large (4 cup) measuring cup. Sprinkle the gelatin powder into the water. Wait 10-15 minutes for it to bloom (that's when it's turned soft, gelatinous, and absorbed the water). Stir well.

Combine the gelatin mixture, vanilla and hot coffee and stir until completely dissolved. Stir in the sweetened condensed milk until fully incorporated.

Pour into individual serving cups or molds. This is why I prefer to mix in the 4 cup Pyrex, because it's easy to pour into the serving cups with no mess. Cover with plastic wrap. Refrigerate until firm.

To serve, top with whipped cream and chocolate shavings, if desired. To make the chocolate shavings, I place the chocolate bar in the freezer for about 30 minutes so it's hard. Then I use a vegetable peeler to shave it onto a parchment sheet.
