Sabudana Tikki

I learnt this recipe from my mom when in college, which has always been mine and my daughter's favourite! It's a recipe eaten especially in fasts ( vrat, upwas) and is a pleasent variation from the sabudana khichdi. It can be served as a snacks, breakfast or as kids snacks time munch during breaks. Rich in energy and protein from the yoghurt and peanuts, it's a must try . Sharing this as Mother's Day gift for my mom❤️🙏🏼💐!

Start with washing and soaking the sago pearls in 1 cup water and rest it for 4 hours.

In a bowl, combine all the remaining ingredients and mix well. Drain water from the sago and mash well with hands. Then add the prepared mixture to it. Prepare a soft dough and rest for 10 minutes.

Heat a griddle. Grease with oil. Apply oil to hands and make lemon sized balls from the dough. Press into cutlets/ tikkis, roll in ground peanuts and shallow fry from both sides by pouring oil on the sides till golden and crispy. You may air-fry them as I have done to avoid the oil.

Serve piping hot with yoghurt mixed with chilli powder, salt, cumin powder and sugar. Or serve with green chutney made by grinding peanut, green chilli, coriander leaves and yoghurt.

Tips
Do not mash the soaked sago without draining away the water through a colander for a proper consistency.
Coat well with roasted peanut powder and press it well for crispy tikkis.
