Ingredients

Serves 2 servings
  1. 7 oz (200 grams)chicken breast or thigh, cut into bite-sized cubes
  2. 3.5 oz (100 grams)all-purpose flour or frying flour
  3. 1 tablespoonvegetable oil
  4. 3.5 oz (100 grams)red and green bell peppers, diced
  5. 3.5 oz (100 grams)yellow onion, diced
  6. 2dried large red chilies, seeds removed and cut into pieces
  7. 2scallions, cut into 2-inch pieces
  8. 3.5 oz (100 grams)cashew nuts
  9. Soy sauce, ground black pepper, sugar, seasoning powder

Steps

  1. 1

    Toss the chicken cubes with a little ground black pepper and soy sauce. Coat with all-purpose flour, adding a little water to help the flour stick.

  2. 2

    Heat a pan and add the chicken. Fry until golden brown, then pour out the excess oil, leaving the chicken in the pan.

  3. 3

    Add the dried red chilies and stir-fry over low heat until fragrant (be careful not to burn them). Add a little water, then season with soy sauce, sugar, seasoning powder, and black pepper. Stir to combine.

  4. 4

    Add the diced bell peppers and onion. Stir-fry briefly (do not overcook). Before turning off the heat, add the scallions and cashew nuts, toss everything together, then remove from heat and transfer to a plate. Sprinkle with a little more black pepper and enjoy!
