Mashed Feta Pepper Dip

This is a variation on one of my favorite Greek dips called Htipiti or Tirokafteri. Traditionally this dish is whipped rather than mashed, and it's prepared with feta & roasted red peppers, red pepper/chili flakes and a few other ingredients. Here I have created a Greek-Korean fusion dish, making it more rustic by mashing it with a fork and replacing the roasted red peppers and red pepper/chili flakes with a small amount of Gochujang paste, a Korean fermented red pepper paste. No added salt is needed since both the feta cheese and the pepper paste contain salt.

Mash the feta and yogurt together with a fork. Add the olive oil and mash until combined

Add the lemon juice and gochujang paste; mix until thoroughly combined. Mash a little more.

When thoroughly combined it will look like it does below. Place dip in a serving dish. Smooth over with a spatula and top with a few olives and serve with veggies, savory rusks, toast or pita bread.
