Peruvian Green Sauce

There's a place near my office called Pio Pio that makes a delicious Peruvian rotisserie chicken with a side of amazing green dipping sauce. A friend gave me a recipe possibly adapted from http://yes-moreplease.com/2014/07/jalapeno-creamy-sauce-green-stuff/ and this is my abbreviated version.
Peruvian Green Sauce

Cooking Instructions

Cut the onion half into four equal wedges.

Cut off the stems and discard, then split the peppers in half and discard the seeds. (WEAR GLOVES if you have contact lenses or suffer tomorrow!!!)

Boil all of the pepper halves and one onion wedge for exactly 15 minutes then remove them to a place to cool for a few minutes.

Toss everything into a blender and blend until smooth.

We had some chimichurri sauce in a restaurant and my family loved it. I tried making various versions of the recipe and I eventually arrived at this. It seems like you can also make this with a herb mix from Argentina. I had my friend from Argentina send me one.This recipe uses American style cup measurements so 1 cup = 240 ml. Adjust the amount of red pepper to your liking (We add a little extra in my home). It's best when it's a bit spicy! Depending on what kind of salt you use, the actual salty flavor will vary.
