Spinach Cheese Swirls

It's Friday - what does that mean in our household? Beula comes flying through the streets to make an evening snack. We unwind and munch on something home made and bring in the weekend. I had scribbled this recipe down on a post-it and I had the ingredients in the freezer this week, so within 15mins I put this together and it was in the oven. If you are looking for a party finger food, this definitely is worth the try. When we were munching this done, I added this to our "party menu" - I have this growing list of menu options for whenever we will throw a party ... I love parties and making finger food for parties and this is JUST PERFECT !

While the pastry sheet completely thaws, get your filling together

I chose to gently chop the spinach, garlic and spring onions, and put all the ingredients in a mixer so it took care of the chopping and mixing well in 30seconds

I used frozen spinach, if you use some frozen spinach - make sure you completely squeeze the water out, because that can give you a soggy pastry

Spoon this onto the pastry sheet evenly and roll this into a log

Cut it into 1/2 inch slices and brush them with some egg wash

Bake in a preheated oven at 180C until golden brown

Let it cool for a few minutes and serve!

They smell delicious when they are in the oven, and are just so yummy! :) I added garlic, because I love the smell and taste of garlic with spinach, you can avoid it when you are doing this for a party, because you don't want garlic breath haha :)
