Banana Bread

Who doesn't love BANANA BREAD ... almost everyone does! There is something about banana's at our household that if it's not used by the end of the week, we are very positive something will be made out of it :) Maybe soon I will need to add a separate category called BANANAS. I dislike eating over-ripe bananas, so when we buy them, its still kinda green. I am not sure if Kingsley was very particular with bananas before we got married, but now he gets my theory of buying bananas when they are not so ripe, so by the end of the week, they are not overly ripe :) Anyhow lets get to this recipe:

Ingredients

  • 4bananas Well ripe - mashed
  • 2 cupsFlour all purpose flour -
  • 3/4 cupSugar - sugar
  • 1/4 tspSalt -
  • 1/2 cupButter -
  • 1 tspBaking Soda -
  • 2 dropsVanilla Essence -
  • 2Eggs - beaten

Steps

  1. 1

    Preheat the oven to 175C (350F)

  2. 2

    In a big bowl, mash the bananas well and add the flour, baking soda, sugar and salt

  3. 3

    In a separate bowl whisk the eggs and add that to the bowl and combine well

  4. 4

    Add the rest of the ingredients: Butter and Vanilla Essence, mix well and pour this into a loaf pan

  5. 5

    I don't own one at the moment, so i had to improvise (and thus the bread doesn't look loaf like :) )

  6. 6

    Bake for an hour and it should be done :)  Let it cool, flip it out and serve with some butter :) Kingsley literally breathed it down before the day could end

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US. The day after I landed here, I began a full time job, but I still had a whole lot of free time after 5pm.
