The countdown to Christmas has begun! I've got my pressies mailed and now its all about planning for the parties I am going to and hosting ... lots of feasting this month! Been trying to stay committed to running and working out cause I have SOOOOOO much of eating scheduled to happen LOL. Thought it would be great to open up this month of feasting, with this Indian Chicken recipe
It's been a while since we had our family weekend Indian curry meal - so this past weekend inspite of being super busy, I made this lovely chicken dish. There were a few steps involved, but I loved the flavours in it! My little miss got to try some too - I mixed some yogurt in her portion to keep the heat down just in case and she kept yelling 'more!'

It's been a while since we had our family weekend Indian curry meal - so this past weekend inspite of being super busy, I made this lovely chicken dish. Remove the skin and wash the chicken drumsticks and make slits on the legs.In a bowl mix the marinade ingredients together, add the drumsticks and allow it to marinate for 30mins or so. In the mean time, lets make the curry paste!

Heat the oil in a pan, and one after the other add the ingredients mentioned under 'curry paste'. The onions will need to be softened. I let it sit for a few mins to cool down and then ground it into a smooth paste. If its super thick, you can add a little water

In a deep pot, add 2 tbsp of oil, and add the ground paste. Next add the tomato puree and cook

Until the raw smell disappears - this would take less than 5mins. Also add the chilly, turmeric and garam masala powder quantities mentioned under 'ingredients'. Season with salt and finally add the marinated drumsticks

Cover the pot with a lid and cook on low heat. If you feel the curry is too thick, add some water. I didn't have to add a lot...Once it is ready, serve it with some freshly made hot steaming rice!
