Par boil the potatoes. One whistle in the pressure cooker. Drain and cool the potatoes. In a large flat bottomed pan/kadai add butter, garlic, herbs, chili flakes and let them splutter a bit.

Now add all the potatoes. Give it a good toss. have the flame on high. Cover the pan with a lid and let it sear for a minute. Remove the lid press the potatoes lightly with the ladle. Give it a good stir and cover the pan and let it sear again.

Continue this process for 10-15 minutes or till the the potatoes skin have become dark golden brown

Now here is the trick. You can cool this and keep it in the fridge. Just place them on an oven tray and pop them in the oven at highest temp for 15 minutes with top grill on. Please keep an eye on the potatoes while in the oven as the grilling process will differ in different ovens.

The potatoes will be slightly crispy. You can serve them hot with a squeeze of lemon if you like. They go very well with steaks, grilled meats, salads or as a starter too. Enjoy!
