Pomegranate Granita
A perfect refreshment for those hot summer days
Steps

Mix all the ingredients in a bowl to dissolve the sugar.

Pour the mixture into a large fairly flat dish and put in the freezer for half an hour.

With a fork, scrape down the ice crystals that form around the edge and put it back into the freezer for 20 minutes.

Repeat the fork action and check every 20 minutes until there is no liquid left and you are left with pomegranate ice crystals.

Put the granita into a lidded plastic box and store in freezer.

Serve by scrapping with fork till you can spoon into a shot glass or a serving bowl.

Note: You can make different flavours of granita - Strawberry, Coffee, Lemon etc. Be creative!! This recipe stores well in the freezer for days :)
