Ingredients

  1. 1 lbChicken breast or thighs
  2. 1 canCoconut milk
  3. 4Green onions
  4. 1 tspGinger
  5. 1 tspTurmeric
  6. 1/4 tspDried red pepper flakes
  7. 1 tbspLime juice
  8. 1 tbspSoy sauce
  9. 1/3 cupFresh cilantro
  10. 8 ozBaby portobello mushrooms
  11. 8 ozPineapple chunks
  12. 2 tbspCornstarch
  13. 2 tbspWater
  14. 2 cupCook rice
  15. 1/2 cupChopped peanuts (optional)

Cooking Instructions

  1. 1

    Combine first 10 ingredients in a crockpot. Cook on low 4 hours or until chicken done.

    Combine water and cornstarch, then add to chicken mixture. Then add pineapple chunks (include juice in using canned fruit). Cook 15 mins on high.

    Serve over rice. Top with nuts (optional).
