Ingredients

  • 1 lbChicken breast or thighs
  • 1 canCoconut milk
  • 4Green onions
  • 1 tspGinger
  • 1 tspTurmeric
  • 1/4 tspDried red pepper flakes
  • 1 tbspLime juice
  • 1 tbspSoy sauce
  • 1/3 cupFresh cilantro
  • 8 ozBaby portobello mushrooms
  • 8 ozPineapple chunks
  • 2 tbspCornstarch
  • 2 tbspWater
  • 2 cupCook rice
  • 1/2 cupChopped peanuts (optional)

Steps

  1. 1

    Combine first 10 ingredients in a crockpot. Cook on low 4 hours or until chicken done.

  2. 2

    Combine water and cornstarch, then add to chicken mixture. Then add pineapple chunks (include juice in using canned fruit). Cook 15 mins on high.

  3. 3

    Serve over rice. Top with nuts (optional).
